Simple syrup, or sugar syrup, is a basic sugar and water syrup often used as a sweetener in cocktails. Infused simple syrups can add not only sweetness but also depth of flavour to various cocktails. These flavoured syrups are made by infusing simple syrup, during the cooking process, with a wide variety of flavouring agents and can even be used in combination with others. Herbs (rosemary, spices (chipotle chillies, cardamon), or aromatics (orange peel, lemongrass, ginger) are just some of the flavours that truly complement certain cocktails.
This recipe shows how to infuse simple syrup with lavender and thyme which can then be used in our sparkling lavender-thyme vodka lemonade. You can also follow the same instructions and infuse the syrup with other flavours or not infuse it at all for plain simple syrup.
- 3/4 cup Sugar
- 3/4 cup Water
- 1/4 cup Lavender
- 1 bunch Thyme
- Boil the sugar and water in a small saucepan until sugar is dissolved and continuously stir throughout
- Turn off the heat and add the lavender and thyme
- Let syrup cool completely
- Strain syrup into a jar or container
Tip: In any simple syrup recipe (infused or original) always use equal parts water and sugar.
